Wild Papaya Pineapple Green Tea Sorbet Recipe
2 tablespoons
Wild papaya pineapple green tea
1/4 cup plus 1 level tablespoon sugar
Freshly squeezed juice of 1/2 orange
Freshly squeezed juice of 1/2 lime
Serves 4
Make tea as usual, using 1 1/2
cups boiling water and infusing
for three minutes. Put sugar
into a bowl. Pour hot tea over
the sugar and stir until
dissolved. Let cool.
Add the fruit juices to the tea
mixture, then churn in ice cream
maker.
Serve immediately or freeze.
This is an intensely flavored
ice, so serve in modest
proportions, about 2 tablespoons
per person in small glasses.
